I absolutely love baking this, with fresh raspberries, picked from my allotment , you can see more about that here: https://www.instagram.com/latina.gardener.uk/

Back to the brownies , hope you enjoy them too !!

Makes 12

Ingredients:

200g good plain chocolate, broken into chunks. ( you could also use dark chocolate, I used a 54% cocoa solids dark chocolate for brownies)
125g butter ( at room temperature)
275g Soft light-brown sugar
1tsp vanilla extract
2 large eggs, lightly beaten
100g plain flour, sifted
2tbsp cocoa powder
125g raspberries

Butter and line 20cm. square tin with grease-proof paper ( I used a rectangular tin) , allow the paper to come up the edges, this will help you to remove the brownies.

Put half of the chocolate in a bowl set over a pan of simmering water. Stir to help it melt then remove and allow to cool a little. Chop the rest into little chips.

Beat the butter and sugar with an electric mixer until light and fluffy. Add the vanilla then the eggs, a little at a time, beating well after each addition. Fold in the flour and cocoa followed by the melted chocolate. Stir in the raspberries and the chocolate chips.

Scrape the mixture into the prepared tin.

Bake in a preheated oven at 180 C/350 F/ gas mark 4 for 55 minutes until just firm to the touch (the skewer test doesn't work as the centre is still molten).

Leave the brownies in the tin until warm - they will continue to "set"- then run a knife between the paper and tin and carefully lift the paper out. Cut them and enjoy !!

I had these with ice cram.. and it was delicious

Enjoy xx

1 Sachet of dried yeast
1 tbs of white sugar
1 tbs of salt

Start by placing the sachet of dry yeast into a bowl, to the yeast add 1 tea spoon of sugar, 1 tea spoon of salt, 1 table spoon of greek yogurt, then add one cup of warm water.

Mix it all together and dissolve it. If you are using instant yeast you don't have to wait for the yeast to activate :)

Then we add to 2 cups of flour, then using our fingers we stir and mix , once its mixed we add half of cup of flour and then stir and mix again and then add the other half of cup of flour.

Once the dough starts to come together, take out onto the surface / table and sprinkle some flour and knead for about 5 to 10 minutes.

After kneading for about 10 minutes sprinkle some flour on a bowl and place the dough in it, the flour will prevent it from sticking to the bowl.

When the dough has risen, add some flour on your working surface and place the dough, then divide it into about five or six pieces, depending on the size you want them and also depending on the size of your frying pan, where its going to be cooked.

then flatten a piece of your dough, you can do it by hand or with a rolling pin, it could be round or oval shape.

Place a little oil on the frying pan, once the oil is hot , turn the heat down and place your dough, and when coking it should puff up by the sides, and bubbles start to form, that's the result that you want.

After around 5 minutes carefully flip it over. It should take about 5 minutes to cook on each side. It still has to be soft and fluffy in the middle, as the bread, once cooked, should be able to fold.

When its golden brown on each side, take it out. And repeat the process with the remaining dough.

Once the bread its cooked, add the chopped parsley to the melted butter, mix and brush it on top of your bread ( this is optional )

And its ready to serve !;)

Love granola! It is very easy to make, and you can literally add anything you want.

The finished granola will keep in a airtight container for up to 4 weeks 😉

Ingredients

6 tbsp coconut oil

500g rolled oats

100g coconut flakes (I used less as I wanted mine more nutty than coconut flavoured, but its up to you! 😉)

100g dried fruit, cut in smaller pieces if large ( I used dried apricots and cranberries, wich you could either add it to the mixture to bake or add them at the end when the granola is cool and ready to be stored)

100g mixed nuts roughly chopped ( I used almonds, hazelnuts, walnuts and brazil nuts)

100g mixed seeds ( I used sunflower and pumpkin seeds)

2-3 tbsp of honey or maple syrup ( you can add more to taste)

1tsp of cinnamon powder

1tsp of vanilla extract

Heat the oven to 170°C / fan150°C / gas3 1/2. In a small saucepan, gently warm the coconut oil until it melts to an even pouring consistency. Remove from the heat and leave it to cool slightly.

Mix all the dried ingredients together in a large bowl. Add the honey or maple syrup and vanilla to the melted coconut oil and stir well.

Pour the coconut oil mixture over the dry ingredients, then work well with your hands, lifting and mixing until all the ingredients are covered in a light sheen. Taste and are more honey or maple syrup if needed.

Line 4 baking sheets with baking paper, then divide the granola among them in a single layer ( or use two baking sheets and work in batches). It's important the granola isn't too crowed when it goes into the oven.

Bake for 15 minutes, giving the granola a gentle stir halfway through. Keep an eye on it from around 10 min mark to prevent burning.

Remove the baking sheets from the oven and set aside for the granola to cool completely. Transfer to an airtight container.

And its ready to sprinkle over yogurt or poached fruit...

Enjoy xx

I saw a recipe for Cream Cheese soft rolls.. and didn't have some ingredients, so I adapted it and made seeded soft rolls.. and the result was good !

So I'll leave you the original recipe and how I adapted it by changing a few ingredients and follow the recipe as normal.

Cream Cheese Soft Rolls

300g Bread Flour ( I used seeded bread flour)
150ml lukewarm milk
5g instant dry yeast
One egg
Pinch of salt
50g cream cheese ( I used 3 tablespoons of natural greek yogurt)

Note that the original recipe doesn't have sugar, I didn't add it beacuse I normally eat the rolls with butter amd jam.. but you could add some sugar if you wish.

Method

Put everything in a stand mixer using the dough hook and mix it on a low speed for 15 mins. ( you can also do kneed by hand)

Take it out and form a round ball, but it into a bowl and proof for 60 mins or until it is double the size.

Divide it into 12 equal balls.

Proof it for a second time for 45-60 minutes.

Sprinkle some flour on top (I added some sunflower seeds only) And bake at 160 degrees Celsius in a fan force oven for 15 mins I don't have a fan oven , so I baked them at 180 degrees, gas mark 4, for longer !

Remove and enjoy warm .

Take care.. enjoy xx

Yayoi Kusama's Infinity rooms are coming to Tate Modern!!

The Gallery has revealed details of a new year-long Yayoi Kusama exhibition to mark the gallery's 20th birthday.

One of the installations, Infinity Mirrored Room — Filled with the Brilliance of Life, is among the vastest pieces in the 90-year-old artist’s repertoire, and returns to Tate Modern after it was created for a retrospective there in 2012.
The other — called Chandelier of Grief — is said to “create the illusion of a boundless universe of rotating crystal chandeliers”.

I would highly recommend visiting, I enjoyed the exhibition in London at Victoria Miro gallery in 2018 ( as you can see in the pictures), and this is now a great opportunity to enjoy her work, as its very popular, so be ready to queue.. wait... and take pictures quickly !

Tickets will go on sale on the 2nd of March.

It is National Allotment Week .. and I had to dedicate a post here on my blog about it !!

As you may know, ( and if you didn't , you'll know now) I have an allotment in Hertfordshire , just outside London. And had it for about 5 years or so.

I can not start expressing how it has helped me, and how much it has taught me, and continues to teach me. Its all said in the media how it helps you with your mental health and wellbeing, and I could not agree more !

Being from Bolivia /Latin American .. there are a few edibles that you cant find here in the UK, and in my family we enjoy a spicy sauce called llajua , made with chillies, tomatoes, quirquina and huacatay, the last two are herbs which gives the sauce that special flavour.

Can you grow Latin American edibles in the UK ?

It may be difficult but not impossible, in the allotment we had quite successfully grow Bolivian garlic, and in the greenhouse , probably the most precious herbs for us quirquina and huacatay.

Every year its different, the weather its important , the soil, the timing in sowing, and every year it varies, but you learn and you apply the knowledge into the following year.

I would love to find out if there are any other keen Latin American gardeners in the UK, so we can share some tips!! so do email me ;)

Overall I can say that in celebration of national allotments week, is that I'm so thankful to be able to have that space, and also to share with others the enthusiasm of gardening, and growing your own produce.
The benefits are endless, even for kids, it brings families together, it helps you having a healthy diet, and good for your wellbeing .

Its hard work , but very rewarding and satisfying,

The world of modelling could, perhaps be seen as not as your usual place to learn entrepreneurial skills, but there is so much that you can learn from it, and I thought to write this blog to share some tips base on my own experience.

Couple of years ago, I took part in modelling for the longest indoor catwalk in the UK (at the time), it wasn't planned at all, well I went to the audition, just to see what it was all about, and I was almost the last one ( it was a last minute thing to do for fun).
However I received an email saying they have chosen me, and they would wait for my response.

Take risks.

The opportunity was there, and even though I didn't plan it, I thought that it was going to be a great opportunity to learn and gain experience, I had to take the risk and go ahead!

Self belief.

You've got to believe in yourself, it is a key for you to be able to achieve and do what you want.
Not knowing how I was going to walk the longest catwalk (which I didn't know until after the audition) in high heals, without falling, was scary, but a challenge at the same time, and everything that might seem like a challenge doesn't mean that its impossible.

Also being surrounded by other "actual" models, meant that I had to prove myself, but not in a competitive way but in a personal way, believing in myself more.

Learn and keep on learning

Learning is the key, you've got to be willing to learn almost all the time, and while I was in meetings and rehearsals for the fashion show, I learnt from how to walk, etc. from the other "actual" models, and also learnt more about myself, I wanted to learn more from the behind scenes area, and the following year, instead of taking part in the catwalk I wanted to learn more about the behind the scenes.

And I was involved in many areas of the "modelling world "that perhaps are not highlighted all the time. And its the preparation that goes before, during and after the fashion show.
I learned about events management, having to work at different locations and with different team members.
Also Hospitability, I had to welcome not only business owners sponsoring or fashion retailers whose pieces were being modelled, but also the customers, people who where coming to see the fashion show.
Being able to communicate in a good manner in every occasion is essential, but very essential in business, you need to work towards having a good rapport with your customers and also to negotiate with potential clients.

I learned a lot, and I'm so thankful for the amazing experience.

Adaptability and flexibility.

As Mentioned above, having to worked at different areas of the fashion show, was important to be able to adapt to different situations, locations, people. The year that I was "behind the scenes" the event decided to have three different locations and different catwalks, one was bridal, the other one was a Gatsby theme catwalk, and then the last catwalk was the same as previous year.

So different venues, different logistics, different décor, different arrangements, and working alongside different business, from flower arrangements, wedding organizers, catering etc..

Creativity.

Creativity plays a big role, and I think that in Business you also have to creative, being able to adapt and to work in any role, whether it is setting up and decorating the room, or decorating a table, or talking to the clients and get a review from them, creating content for them, etc.
And all those details are important in a Fashion event.

When modelling you are creative in every way, you've got to be thinking how you re going to pose, how you want to show off, in a way, the clothes you are wearing, when you are working with the retailers you are modelling for, they have their own vision of who is the piece for, or in which occasion it would be suitable best. And you almost have to get into a character to be able to show the piece, it could be a dress, or something more casual, but you've got to be able to bring that piece "alive" , so much that people would like to buy it.
Because that is essentially the job of the model, being able to sell what he/she is wearing.

I reckon that creativity is important as it makes you think outside the box, and also helps you to have a vision.

See opportunity everywhere

In conclusion, I can say that overall you've got to see opportunity everywhere, sometimes it might not be the field that you might prefer, but you can make learn so much and use that knowledge in the future. It is equally important to know that things don't just happen from one day to another, it does take work, dedication, willingness to be flexible, to adapt and wanting to learn more, take risks, and to be able to be resilient, know that sometimes, things might not work exactly as you want it, don't consider it as failure, but a learning process.

Most importantly is about self belief, it doesn't matter, where you are from, or your circumstances, or anything, what does matter is believing that despite anything, you are able to achieve what you want. And this experience in modelling has tought me exactly that.

I hope that with this blog, I can inspire you to perhaps take the plunge and do what you wanted to do, but there was a "but I'm not sure, I don't know if I can" holding you back.

And be that woman who is an entrepreneur, independent, capable of achieving anything.

2018 Marks 10 years of dancing here in the UK, and I thought I should dedicate a blog to celebrate it ;) , sharing the important life lessons I learned during this time.
and without further ado, let's begin the blog.

Dancing has always being part of my life since I was a little girl, I came to the UK to study and kept taking dance classes, in street dance and hip hop, until after a couple of years later... I went back to my roots.. Bolivian Folklore..

I was on my way to meet my first Bolivian friends, and I remember coming out of the Elephant And Castle train station, I felt like I was on a different place ! ( because I live outside London, and there isn't anything latino here ) just listening to people speaking in Spanish, listening to Latin music, felt amazing and changed my life !!

I reckon there is opportunity in anything and everywhere, if you put your mind to it, and if you are determine you can accomplish anything.

With dancing.. most importantly you learn valuable life lessons, that will help you grow as a person and be a better version of yourself.

Be Brave, take risks, and be positive.

Everything new might be like a challenge, I was dancing Bolivian folklore for a while, and wanted to do something different, I love Colombian folklore, but had no experience in dancing to Colombian music, only perhaps the admiration for the music and beautiful dance outfits, which made me take a risk in joining a Colombian dance group, and dance with them and eventually other groups, little did I know that I was going to fulfil a dream of mine (to wear a beautiful outfit) and to dance to Colombian music.

So yes, in life...be brave, be positive, and take risks..

Take the Negative criticism and turn it into a positive. (Don't Give Up)

I have heard quite a few times, "I don't think it's a good idea if you do that", or more straight forward " you can not do that" " you will not be able to do that".

yes in dancing and in life in general, people might tell you many things that might lead you to doubt yourself, but its important to take that negative criticism, and turn it into a positive. I have had people telling me that I wont be able to do certain things, I thought about it, and always though "why?" why wouldn't I be able to do certain things?".

It took me determination and positive thinking to say, well If it hasn't been done before, then I shall try my best to do it, at least I knew that I was going to try and found out by myself whether it can be done or not.... And … It CAN be done.

Believe in yourself, take all the criticism , negative, positive, to learn and build yourself, to allow yourself to grow, as a dancer, and as a person.

Be Positive.

Ok, this one might be similar to the one above, but overall it summarises that in dancing and in life you need a positive approach, for everything and anything.

Which means that if you have a positive outlook on things you can work towards finding solutions, or different ways to do something, having an open mind and positive approach can benefit you, and take you far.

Also it gives you the encouragement and motivation to do what you want to do and to do things that you might not even thought of doing.
It also benefits people around you, your dance team, your friends. And helps you achieve your goals.

Team Work

You get to meet many people and learn form them, and when you dance, team work is crucial, and I would say specially within the Latin American community in London, I have met and dance with many people from Colombia, Peru, Ecuador, etc, and everyone has different customs, and you got to be open to different ways of doing things, communicate better, share your own opinions, be understanding and learn.

You get to learn from different cultures and different ways of doing things, and its amazing. It helps you to understand your dance team and to work together as a group.

Be creative, Think Outside the Box

Dancing, encourages you to be creative, and more creative, not only in customs, but with everything, hairstyle, make up, choreographies etc. And you might be thinking how can this be helpful on a daily basis?
Well being creative, allows you to think outside the box, to think in different ways to do something, and it inspires you to improve.,doing something ..but better, different ..adding something , making it stand out.

Creativity allows you to innovate and do something different and original.

The Show Must Go On.

Something that you learn and you get used to in dancing is that sometimes you have to adapt to different situations, in different events, etc. and sometimes, you have to do something else, or dance another song, or replace someone, or maybe change choreography when someone can't make it, etc.. there are different things that can change.

However, as they say "the show must go on", and you perform with the same smile and energy on the stage, regardless of any inconvenient situation that may happen.

And that's exactly what you get used to do, regardless of some difficulties that you may encounter in life, you (obviously think positive, as mention above) and you carry on, smiling and with the same enthusiasm, thinking positive, and finding a different way to continue and to carry on.

For all that and much more.. thank you for this 10 years of dancing !Miss Obleashttp://www.blogger.com/profile/01958860046172775456noreply@blogger.com0tag:blogger.com,1999:blog-5116126227707640741.post-56401460524164086912018-11-29T16:58:00.002+00:002018-11-29T16:58:23.720+00:00#Free burritos, come and say Hola at Benito's Hat in St. Albans

A Woman's Lifestyle and Wellbeing:
The Power of Being Positive

I'm going to start this blog with perhaps, something not so positive (ironic I know) but it is necessary, as many women, including myself, can sometimes struggle to be positive, thinking that we are not able to do something, whether its going for a dream job interview, having the courage to actually take the trip to the country we always wanted to visit, even taking up class, language course, etc. Why? because we don't think we can do it, for various reasons ( I would say excuses) right ?

Because our mind its so powerful, can sometimes lead us to think all the negatives, instead of the positives in a situation, we focus so much on what could go wrong, what would people think, we can even doubt our own abilities, and that can lead to something even worse, it could actually make us feel stressed, anxious, nervous and with low self-esteem, that ultimately makes us loose valuable opportunities.

I had experience a situation where I was feeling just like that, I only had to talk about an issue, express my views, reasons, exchange ideas, and accept whatever outcome (hoping always that it would be a positive one) but then with all the anticipation, pressure I put on myself, overthinking and suddenly all the negative thoughts blurred my mind, In a way that hasn't happened before.

I consider myself to be a woman who always focus on the positive, in every situation. I do like to take on a project, even if I might not be so experienced in the field, but if the opportunity is there, I'll take it, because I know, I'll learn as I go along, I'll do my best, and I will put 110% of my effort and motivation to achieve that end result.

For example: Little did I know that I would end up modeling for the longest catwalk in the UK years ago, I don't consider myself a model, I was one of the last people to audition, and was just for fun. When I found out I was selected, I was shocked, and I did hesitate whether I should do it, having absolutely no experience. But I had to take the opportunity, it was there, and I focussed in all the positive benefits I would gain from it, because I do like to learn about events management, and business in general, I thought that it would be a great opportunity to gain knowledge and experience. And I did, one year I modelled, learnt a lot, the next year I wanted to be more involved in the managing, and behind the scenes, learning about the industry, hospitality, the business, and how it all comes together when organizing events, and I did just that. ( I will write another blog on this!)
The point is, if I hadn't thought of all the positives of the situation I wouldn't have that experience and gained all the knowledge.

Why did I focussed on the negatives then?

Going back to the situation where the negative thoughts took over my mind, to this date, I wonder myself why? ..why did I let it happen? how did I bombarded myself with negative thoughts? why I couldn't speak ? why I wasn't able to feel confident enough to handle the situation, in a positive and graceful manner.

It's not like I am afraid to express myself, all the opposite!! I can be in a event with business owners, diplomats, etc, and confidently express my views, opinions and ideas. I did once talk to a friend who was starting his business, about how he can marketed it, 3 years on, to this date he uses the words and idea I gave him. I can be humbly proud of that!
I can stand in front of a group of people and give a talk about a subject, prepare and organize a presentation, I can deal and negotiate with people when I have to, whether it is for social media/blog collaboration or events, etc.

I'm also a dancer ( you can check it out if you wish) so before the performance, there is the events negotiation, planning, logistics of the venue, organizing etc. And dealing with all the unpredictable things that can happen at an event. Plus I do have to feel confident to put on my dance costume, smile and dance in front of many people. Sometimes representing other countries like Colombia (I'am from Bolivia) yes I do like to challenge myself to do something different and gain knowlegde.

I "should" be able to face anything, having mentioned everything above, but the truth is sometimes we do struggle, many women would relate, when I say: that sometimes it can be too much for our mind, the stress, the nervousness, anxiety, pressure, etc. it can be draining.

I reckon that I've let my mind focussed on the negatives in a particular situation, because it was very, very, very important for me, I put a lot of pressure on myself to do the right thing, and I did struggle .
Our mind its so powerful that can take control of us sometimes, but we can, and we must ( I shall say) learn to control our thoughts, only ourselves can do that.

You Have The Power to be Positive

We must always remember that we are capable of doing everything, and anything we want. We have the power to control our thoughts, to think positive, to challenge ourselves, to achieve our goals. And that can only be done if we think that we CAN do it, instead of "I'm not sure". Only ourselves can change the way we think.

As women, whether working mums, single mums, independent women, it doesn't matter where we come from, where we live, what we do, etc. We might not be in an ideal place, moment in our lifes/careers etc. But remember, you have the heart, passion, drive, patience, motivation and determination to achieve what you want.

I would love to launch a project next year, which I have been working on years back, gaining experience, confidence, and base on the positive response and feedback I received so far, it motivates me even more! I know that nothing can be "perfect", but its how we adapt our mind to deal with everything.
Some people may say that I wont be able to do that, the market its too crowded, there are people already doing that, etc. But I know that I CAN do it, if I have to face any challenges, I'll learn along the way ;)

Having goals, determination and positive thinking, can improve our lifestyle and wellbeing.

By being positive, we can inspire others to have more self-love, self-esteem and to be a better person everyday.

Migrateful is just that: a new series of events where participants don’t just taste cuisines from around the world, but are taught to cook them by asylum seekers and refugees who have migrated to London

Migrateful is a cookery and language initiative where asylum seekers, refugees and migrants struggling to access employment in the UK due to legal and linguistic barriers, teach their traditional cuisines to the public.

It sees those struggling to access employment in the UK due to legal and linguistic barriers teach their traditional cuisines to the public. The chefs bring their home cuisines from countries across the world including Syria, Iran, Nigeria, Eritrea, Cuba, Ethiopia and Pakistan.

The aim is to improve their own wellbeing, aid their England speaking skills and in turn improve their confidence. But it also broadens their social network and improves their employability at a time when they are unable to work for other reasons. It was also created to enable positive interactions between Brits and the migrant community in the UK.

Each chef receives professional training and English tuition with Migrateful, as well as the chance to practice their language skills through the teaching of the classes.

Each Migrateful class lasts three hours where participants cook and share a three course meal made from their chef’s home country. For one person to pay for an open class it costs £35, £70 for two people. A private cookery class – for up to 8 people – costs £245. That price can be split between the group, making it just over £30 each.
